Yesterday and today... I'm going though an omelette phase... that and I have too many eggs so I have to do something... yesterday today with more chives... I love chives.....

HA!.... there are 5 dozen in the firdge... they're banking up.... so I have use some up... plus, we got a new fridge.... yayyyy!!

Good Lord but those are fine looking omelettes! My mouth is watering as I type, I think I'll have eggs for lunch. I don't know if it's the same for everyone (I'm aged near 60) but my doctor says to limit myself to five googies a week.
But that being said, love your omelettes Caskur.

I hate eggs although I force myself to eat them, usually scrambled or poached and no more than 3 per week. I like them in cakes though!!
I've always got too many eggs as well because my son gives me heaps from his chooks. They can't use them all up either. Might be time to make some more cakes!!

I stopped eating eggs because when I have too many, I get a bit of an allergy... eat them whenever you want... it's all bullshit the claims they make about some foods,.. egg yolk has got something in it for healthy eyes apparently....

Interesting info on the eggs, Caskur. I've always eaten them strictly for the health benefits ... other than that I really don't like them much. But they're definitely much tastier with bacon.

you know, my vision has deteriorated in my left eye and it probably had something to do with me stopping eating eggs but I'm going to change that and see if there is an improvement...
I had too many chickens and used to get too many eggs and got stomachs for my troubles.... now I have 5 chickens and that's enough for a household of 3.
but I love baked egg custard....I'm too lazy to make it... it's a bit of a juggle with removing them from the oven. I cook them in glass bowls standing in an oven baking dish of water... it's a bit heavy for me these days.
I might make one though today, that'll use up a dozen eggs.
My husband is coming back from visiting his mum 3 hours south of me and dropping off a new car to her... she's bloody 80 and still driving!

I don't eat mushrooms Cas ... I don't like the look of them or the idea of eating fungi. My son likes them though so I had to cook them for him. I'm fairly fussy when it comes to food. I like just plain basic stuff - I could actually eat steamed vegies and mashed potato every night of the week and never get sick of it. For breakfast I usually just like cereal - mainly meusli - with added nuts, banana, a prune or two and some sliced peaches to take away the dryness of the oats. Topped with Paul's Smarter White with 2% fat. So I kinda eat healthy. I do like grilled cheese on toast though. It's gotta be a particular cheese slice that is perfect for grilling ... it puffs up nicely under the grill and goes a golden brown. Maybe with a grilled tomato. It would be even nicer with a slice of bacon. I guess I'm not a food connoiseur and I think cooking is a waste of time.

I won't touch cereal... I like LOTS of sugar on it or I won't eat it... so I have sugarless breakfasts....

Cas Great to see someone else brave enough to use cobalt blue n the kitchen. We started off with a sky blue but it looked insipid, before going much darker...looks great with our stainless steel bench tops and fire engine red coffee mugs sitting in the rack ...must find a photo...

I'm an egg ADDICT! 4 minimum (I won't tell you the max - you don't want to know, trust me!) in scrambled eggs. I do a big saucepan full with curry and pepper in it and just have the scrambled eggs as a big meal, not with toast or anything, just as it is. I have a LOT of eggs a week, probably twice or more than I should have. Scrambled, omelette, fried, boiled (like to snack on like, 5 sometimes while on the computer), like them any way. I don't want to know what my cholesterol level is, but I would hard an extremely hard time giving them up, they are so delicious. Besides, I really don't have much of any fried foods like chips or other greasy stuff, and don't like salt on my food, so maybe it evens out.

I'd rather be dead then. I thought it was 7 a week? One per day was what I thought the rule of thumb was? Unless they're changed it. Even with that, I would have a hard time sticking to it.

I make a souffle omelette...separate the eggs, beat the yolks lightly with a bit of salt and whip the whites until soft peaks form then add a spoonful of whites to the yolks and mix before pouring this into the whites and GENTLY fold the yolk mix through until well combined but still fluffy Pour the mix into hot pan...shake it to spread (don't use a utensil) and cook the bottom a little before adding the filling. I prefer to grill the top, but you can flip it over half if you prefer then cook it a little longer until the centre is just cooked. The result is a thick fluffy omelette.
