SLOW COOKER ITALIAN CHICKEN heart emoticon
Serve over pasta or eat just the way it is !! Save the leftovers to use in wraps, YUM!
Ingredients: 1 pound boneless skinless chicken.. 1 yellow pepper cut into chunks 1 red pepper cut into chunks 1 onion chopped 3 garlic cloves minced 2 tsp dried basil 1 tsp oregano 1/2 tsp thyme 1 tsp sea salt (optional) 1 14.5 oz can stewed tomatoes
Directions: Place chicken in bottom of crockpot Place peppers and onions and garlic on top Sprinkle the basil, oregano, thyme and sea salt Pour stewed tomatoes with juice over all Cook on low for 6 hours

Hang on Jody, it's an interesting recipe and I'm always open to slow cooker ideas (I've been doing slow cooker veal goulash this winter and it's a big hit), but 114.5 oz?? That's 7lb (7 pounds avoirdupois weight) of tomatoes! Wow!! Do you mean a 400g can of tomatoes?

Ok that figures. That's a 400g can which is standard. Bugger the yanks and their backwardness as regards metrics!

Yep, Pim. Time they got on board with the rest of the planet. That looks a nice recipe Jody...I'll keep that one thanks! I made a delicious Cassoulet in the slow cooker (bought for the occasion, as we didn't have one) a few weeks back..rabbit, pork and fennel sausages, carrots, onions, celery, and white beans. Still have half a dozen bunnies in the freezer after weekend spent on the family farm. I think your recipe could work well with 'lapin' too Jody

Stewed tomatoes...whole or diced?
With the chicken...personally, I would use skinless thigh cutlets...I think the bones lend a depth of flavour to a slow cooked dish
