Love these cob loaf recipes.....for me this one will be yummy minus the bacon
Cob loaf dip.
Cob loaf 125g grated cheese 250g sour cream 310g can corn 420g creamed corn 1/2 red capsicum 2-3 shallots 3-4 rashers of rindless bacon 1/2 red onion 1 teaspoon cayenne pepper Salt and pepper to taste
Chop bacon into small pieces. Fry with cubed red onion. Add chopped shallots after bacon and red onion soft. Combine with sour cream, grated cheese, corn, creamed corn, capsicum, cayenne pepper. Salt and pepper to taste. Hollo cob loaf, fill with mixture. Bake in a 180° oven for 30 minutes. Bake scooped out cob loaf to use as edible spoons.
